"OFF THE GRILL BBQ POTATO SALAD" for Dad!

The Hubs is heading off to the Blue Jay game. (Mel's) The other Hub's will be on the BBQ today for the family lunch!

Last night was a bit of a bust, Tragedy truck the Downsview concert stage before Hubs arrived and the Radio Head concert was cancelled. It was very sad to hear one person lost their life. That is one Father who will not return home (if he had children) also their will be one Father who will be mourning the loss of a son on this Fathers day . Our hearts and prayers go out to his family.

In honour of Fathers day we made our famous OFF THE GRILL BBQ Potato salad!

Hubs likes his potato salad full of flavour, salty and sweet!


Recipe

1.5 lbs small red potato - wash, chunk - leave peel on and boil or microwave till soft.
while potato are getting the hot bath:
clean and dice :
4 green onion
6 cherry tomato
3 celery stalks
&
stir in a handful of chopped sundried tomato !! YUMMY!!! 
Set aside in bowl.

MEAT time :)
dice one pre cooked sausage 
add 1/2 cup crumbled -homemade or store bought bacon bits (we told you this was BBQ potato salad!!)
add to above mixture

Stir cooled potato, veggies & meat in bowl.

Sauce it up!:
to finish the salad off you need a powerful dressing.

1 cup non fat sour cream,
1 cup light mayo
1 cup your favourite BBQ sauce
& stir in 
2 table spoon of your favourite MESQUITE seasoning.
combine and fold into your potato, veggie & meat mixture.

Top off with a few slices of cherry tomato and green onion.
Feel free to add pepper to taste 
* NO ADDED SALT REQUIRED-  if your BBQ sauce and Mesquite season have a lot already .. most likely your bacon and sausage will have it too

The HUBS likes things salty .. it's the dutch in him LOL :) 

It is best to make this up a few hours ahead of time to let the MESQUITE settle in.
Cover and cool in the fridge!
We try for over night if we can swing it!
